So Fun To Be Back!

I have spent the last 27 days basically internetless.  Travel for work and pleasure kept me away from all but the most necessary internet usage, mainly checking school email.  Withdrawl set in early and I really missed my blogs and all the inspiration the internet has to offer.  I spent the past 2 mornings sitting on my back porch, coffee and laptop in hand, catching up.  Below are some of the wonderful recipes I discovered in just a few hours.  Can't wait to see what I find over the next few days on my book and craft blogs.

Candied Jalapenos
Zucchini Jam
Pickle Pot
Beer Braised Chicken
Cuban Chicken Salad
Dill Pickle Relish
Whole Chicken in Cast Iron Dutch Oven
Lemon Bars
Bacon and Zucchini Quiche
Zucchini Flutes Piped with Basil Ricotta Mousse
No Bake Chewy Granola Bars (like Quaker)

Meal Plan Monday - Week of June 26

It has been a LONG time since I put together a meal plan.  The end of the school year always is crazy and then I have been out of town for a LONG time.  Since May 31st I have been in Lexington, KY, Cincinnatti, OH, Washington, DC and North Myrtle Beach, SC.  I have slept in my own bed only 5 nights in the past 27 days.  I am SOOOOO glad to finally be home!  My family is glad too as they can depend on a regular at home meal and not a quick run through the drive-thru or whatever Nanny is cooking.  There's not much in the freezer, refrigerator or pantry, but let's see what I can come up with!

Sunday - Grilled Hamburgers, Baked Beans, Potato Salad, Garden Salad, Tomato -Cucumber Salad
Monday - Chef Salad with Bottle O'Beer Grilled Chicken
Tuesday - Grilled Sausages with leftover Baked Beans and Potato Salad
Wednesday - Chicken Divan, Cucumber Salad, Sliced Garden Tomatoes
Thursday - Ham and Cheese Bowtie Pasta with Peas
Friday -Chicken Taco Casserole with Cuban Salad (minus the chicken)
Saturday - Leftover Buffet

Baking - Zucchini Muffins or Whoopie Pies, Lemon Squares
Canning - Mock Apricot Preserves, Quick Grape Jelly, Strawberry Preserves, Strawberry-Jalapeno Jam, Miz Helen's Pickle Pot, Pesto (substituting sunflower seeds for the pine nuts)

Counterfeit Kit - June

I am REALLY late putting together my June Counterfeit Kit.  I have been out of town most of the month and will be going several more places before the month is out, so, I'm not sure I will even have time to scrap with my kit, but I had to put one together nonetheless.

This month's Counterfeit Kit is inspired by Burlap and Buttercup's kit.  You can see the inspiration kit here.  I liked the variety of the kit, but colors were a bit pale for my tastes.  I didn't have any of the papers featured, but since many of the papers were from Basic Grey, I pulled my OLD Basic Grey papers from my stash and used that as my inspiration.  Here is my take on the kit -
